I need to make a simple dish such as a side dish or dessert, and it has to be from Belize.

Did you try and look up on the internet for recipes to find an item that you could make to take to the event you are going to. I bet by looking these recipes up on a search engine you would be able to find what you are looking for.

Shrimp and Tomato CappuccinoINGREDIENTS
2 lbs Tomatoes
1 large onion
1/2 inch Fresh ginger
4 cloves Garlic
3 table spoon Olive oil
1 lbs shrimps heads and shells
1 teaspoon Fresh thyme leaves
1 teaspoon Fresh oregano
4 table spoon Tomato paste
2 table spoon Flour
2 cups Dry white wine
2 quarts Fish stock
Fresh cream 1 pint
Brandy 2 shots
PREPARATION
Dice the tomatoes, onions, ginger and garlic and sauté them in some olive oil.
Than add the shrimps heads and shells and the fresh herbs and saute on low fire till the shrimp shells start coloring red.
At his point you will have to add the tomato paste and continue the sauteing process while stirring frequently.
Stir the flour in the mixture and cook for 5 more minutes
Add the wine and fish stock and bring to boiling point. Keep the soup gently boiling for about 20 minutes, but no longer than half an hour.
Strain the soup and add salt & black pepper to taste.
Whip the fresh cream and season it with some salt and the brandy
Serve the soup in a warmed coffee cup and scoop some cream mixture on top.
Serves 6 people

my husband is from belize and an excellent side dish is ceviche. really really easy and a definate crowd pleaser!!2 large cucumbers
3-4 roma tomatoes
1 small onion
3 carrots
1 bunch of cilantrof
1 c. of conch (shrimp, immitation crab or lobster can also be used) conch is what the belizeans mostly use.
3 limes
salt and pepper to taste
you can use more or less of any of these ingredients... it is all to your taste and liking.
dice all of the vegetables and meat...
chop up cilantro...
squeeze the limes over the mixture
add salt and pepper to taste
you eat this like a salsa. very very tasty. as i am finishing this i am realizing that this isn't really a side dish but more of an app.
you could always do rice and beans.
all you do is cooks kidney beans, add them along with the liquid with rice and add water and coconut milk. this is a staple in belize. really really good as well.

When I was in Belize last week I was lucky enough to be in a store that a woman came in with a "local" food. It was made from Coconut & milk; but I don't know what. I am looking for a recipe for this fantastic treat.Any suggestions>

I suggest you try hitting the search engines like Yahoo and Google to look for those much desired Belizean recipes or any recipes for that matter. That is what I've observe here in the forums, the usual information shared here is the same of that where it came from, from those recipe websites. If you want more option and recipe list then you'll head straight to the source and not wait an eternity for someone to post a recipe here in the forums.

Interesting recipes and a host of other useful information too. I would not so much hit a search engine then let it all end there. Going a notch higher and sourcing that sort of info from Belizeans would be my next step. Enough said of that , I cannot help but look forward to having a taste of food from Belize? Does their food borrow from any external influences?

Food lovers love Belizean food majorly for its simplicity. You will find a wide variety of dishes ranging from the hudut, tamales, escabeche, relleno and chirmole among others. A typical breakfast in Belize will mainly consist of scrambled eggs together with an assortment of other dishes. It is up to the adventurous person to discover all this

Belize Cuisine is blend of Caribbean, Mexican, Spanish, and Mayan Food Traditions. Apart from that, India, mainland China, Nigeria and other American countries over the years adds some new influences with their traditional dishes. This the reason why their dishes are a sure hit to the palates of the general international public cause of the good mix of culture.Here's one and more on the link.
Banana Creole
Ingredients
* 4 large ripe bananas peeled and sliced lenghtwise
* lemon or lime juice
* sugar
* rum
* 1 tsp butter
* custard powder
Instructions
Preheat oven to 350F
Place bananas in a baking dish. Sprinkle with lime juice and sugar. Let rest for five minutes. Pour rum over the bananas and dot them with butter. Bake for about 10 minutes.
Meanwhile, prepare the custard powder according to package directions, but don't refrigerate.
Remove bananas from oven and pour part of the custard so as to cover the bananas. Return to the oven and bake for 10 additional minutes.
Reserve rest of the custard for other uses.

Try this recipeCreamy Cheese Corn Recipe
Ingredients:
3 packages (l6 oz. each) frozen corn
1 package cream cheese (8 oz.)
1 package cream cheese (3 oz.)
4 tablespoons butter, cubed
3 tablespoons water
3 tablespoons milk
2 tablespoons sugar
6 slices American cheese, cut up
Directions:
Combine all ingredients in a slow cooker and mix well. Cover and cook on low for 4 hours or until heated through and cheese is melted. Stir well before serving.

Those recipes are great i must say. And like Eve, just reading those recipes makes my mouth water. I think i will be needing to cook one Belizean recipe and make a taste.

Surely so, Sha Sha. Are there are restaurants as such that are located in Trinidad and Tobago? I have not ever heard of such, but this does not mean that they not exist.

Did I really type that very quickly the last time when I had made those mistakes? I was asking if such restaurants existed in my country, and I also said that I am sure that there probably is one or a few. None that I heard of, however.

Do not bother yourself thinking if there are any Belizean restaurants on your place. The reason why the internet is there at our fingertips is for us to learn from it. Try to check out some easy Belizean recipes if you really like to taste some and then try cooking at home. This saves you lots of money compared to eating at restaurants, at the same time it will be a new learning experience.
